Vegetarian Braai Pie
Ingredients:
- 1 Box Fry’s Meat-free mince with Vegan Gravy
- 2 Rolls puff pastry, defrosted
- 1 Large onion, sliced
- A dash of fresh thyme
- 1 Pack Punnet button mushroom, sliced
- 1 Garlic clove, crushed
- Dash Robertson Garlic Salt or Ina Paarman’s Kitchen Chilli & Garlic Seasoning
- 1 tomato paste
- 1 tbsp. Sugar, to eliminate the bitterness of the tomato paste
- 1 tbsp. Ina Paarman’s Kitchen Vegetable Stock Powder
- Olive oil, for frying
- Salt and Pepper, to taste
Directions:
- In a skillet, heat oil and gently fry the onion until soft. Add the fresh thyme and lightly season with salt and pepper. Remove the skillet from the heat, once the onions have caramelised nicely.
- Add oil and the mushrooms, and fry in a skillet. Add the garlic and give it a stir. Once the mushrooms are golden brown and begins to soften, set aside.
- Prepare Fry’s Meat-Free Mince with vegan gravy according to the instructions on the pack in a separate pan. Add the tomato paste and sugar and allow to cook for another 5 minutes. Add the Vegetable Stock (mixed with water) and give it a nice stir. Spice with salt and pepper and Chilli & Garlic Seasoning and set aside.
Note: : The mince shouldn’t be too watery as it could potentially make the filling fall through the pastry.
- With baking spray, spray the braai grid on both sides.
- On the bottom layer of the grid, unroll one of the rolls of puff pastry.
- Gently spoon the mince mixture onto the puff pastry and evenly spread this out to ensure an equal spread.
- Top the mince layer off with mushrooms and onions. Sprinkle with thyme leaves and season with salt and pepper to taste.
- Unroll the second layer of puff pastry over the top and gently seal the edges of the pie by pressing it gently.
- Using a basting brush, brush the top of the pie with olive oil to give a nice crispy finish on the braai.
- Close the grid and braai the pie over medium coals. Turn regularly for 15 minutes or until the pastry is golden brown crispy and cooked through.
- Cut into squares and serve as a side dish at your next braai and enjoy!
